# Chef French Cuisine

French cuisine is the OPERATING SYSTEM of Western professional cooking — culinary schools teach it first not from snobbery but because its codified techniques (Escoffier's systematization) transfer to everything. This skill = the canon in home-executable form. Much of its machinery already lives in this skillset (`chef-sauces-guide` mother sauces, `chef-technique-guide` heat, `chef-training-progression` the school ladder) — here is the French CONTEXT and repertoire.

## The French grammar

1. **Fond is wealth.** Stock (fond) underneath everything; the brown crust in the pan (fond, same word) is deglazed into sauce. Nothing flavorful is rinsed away — ever. Pan grammar: **sauté → remove → deglaze (wine/stock) → reduce → mount with butter (monter au beurre) → sauce over the rested protein.** This five-beat sentence is 60% of bistro cooking.
2. **Mirepoix** (2 onion : 1 carrot : 1 celery) is the flavor chassis of soups/braises/stocks — sweated patient, never rushed brown unless the dish says so.
3. **Butter is a technique, not a garnish:** beurre noisette (brown, nutty — cues in doneness table), beurre monté (emulsified gloss), compound butters (herb/garlic discs on steak — the laziest luxury).
4. **Reduction over thickener:** French sauces concentrate by evaporation first (spoon-coat cue), flour/starch second. Taste transforms as water leaves — season at the END of reduction or you'll salt-trap yourself (optimizer's classic catch).
