# Chef German Cuisine

German cooking is unfairly memed as brown-and-heavy; in truth it is a precision comfort cuisine: braise mastery, the world's deepest bread culture, fermentation heritage, and a signature sweet-sour-savory balance (fruit with meat, vinegar in the pot) that most cuisines forgot. It is also the ultimate cold-weather, budget, batch-cooking repertoire (`chef-kitchen-economics` approved).

## The flavor signature
Sweet-sour-savory triangulation: apples with pork, dried fruit in Rouladen, vinegar+sugar in braised cabbage, mustard against fat. When a German dish tastes flat, the missing lever is almost always ACID (vinegar, mustard, kraut juice) or the sweet counterpoint — not more salt (`chef-flavor-balance` diagnosis). Mustard is the house acid-heat condiment; caraway, juniper, marjoram, bay = the spice quartet.

## The meat canon
