# Chef Cuisine Italian

# Chef Italian Cuisine

Italian cooking is the cuisine of RESTRAINT: few ingredients, each excellent, technique invisible. Its core skill is knowing what to leave out. Pizza, carbonara, and bolognese specs live in `chef-world-classics`; this skill is the system around them.

## The Italian laws

1. **Cucina povera:** the greatest dishes are peasant math — stale bread, beans, seasonal veg, offcuts turned into cacio e pepe, ribollita, panzanella. Italian cooking IS `chef-zero-waste` with style; route budget cooking here (`chef-kitchen-economics`).
2. **Ingredient ceiling:** a dish's quality ceiling = its worst ingredient. With 4 ingredients, each carries 25% of dinner — spend where it shows (real parmesan, good canned tomatoes, decent olive oil; the premium-worth-it table in economics agrees).
3. **Seasonality is the menu:** tomatoes in winter = a different dish (use canned — Italians do). Cook the market, not the craving.
4. **Restraint under pressure:** the beginner urge is to ADD (garlic AND onion AND herbs AND cream). The Italian answer is usually subtract and execute better — flag this in recipe audits (`chef-recipe-optimizer` — cream in carbonara is the canonical crime).

## Pasta as a system

- **Salt the water 10 g/L**, cook to 1–2 min under package (bite cue: thin white core), FINISH IN THE SAUCE with starchy water — pasta and sauce must marry in the pan, never meet on the plate. This single habit upgrades every pasta forever.
- **The sauce-shape marriage rules:** long thin (spaghetti) = oil/tomato-slick sauces; long flat (tagliatelle) = rich ragu (grips); short ridged (rigatoni, penne rigate) = chunky and baked; shells/orecchiette = catch peas and bits; fresh egg pasta = butter and cream family. Wrong marriage = sauce puddle.
- **The starchy-water emulsion trio** (cacio e pepe, aglio e olio, carbonara): cheese or oil + pasta water + agitation = creamy sauce with NO cream. This is emulsion physics (`chef-sauces-guide`) and the highest technique-to-ingredient ratio in cooking. Cacio e pepe with 3 ingredients is a graduation exam — clumped cheese means water too hot: temper at 60–70°C.
- **Fresh egg pasta:** 100 g flour : 1 egg per portion, knead 8–10 min, rest 30, roll thin enough to read through; ravioli and lasagne sheets from the same dough (dough handling from `chef-baking-doughs-guide`).
- **Tomato sauce, the honest baseline:** good canned tomatoes + garlic OR onion (choosing both is already maximalism) + olive oil + salt + basil, 25–40 min. Marcella-style butter-onion version for silk. That is all it is; recipes with 12 additions are hiding weak tomatoes.

## Risotto (technique, not mystery)
Toast rice (arborio/carnaroli) in fat till clicking-hot → wine, absorbed → hot stock by ladles, stirring often-not-neurotically, 17–20 min to al dente wave (all'onda: pooling, not standing) → OFF heat: cold butter + parmesan beaten in (mantecatura — the step that makes it restaurant). Cues over clock; weak burner is fine — risotto likes medium anyway. One-burner-friendly by design (`chef-constraints-adaptation`).
