# Chef Mexican Cuisine

For full kernel-to-masa nixtamalization, read `references/nixtamal-method.md` and adapt that complete method rather than inventing an alkaline ratio.

Mexican cuisine (UNESCO-listed, and it earned it) stands on three legs: nixtamalized corn, the dried-chili library, and salsa as a living sauce system. The core misunderstanding to kill on sight: Mexican food is about CHILI FLAVOR — fruity, smoky, raisiny, chocolatey — not about pain. Heat is one adjustable dial (`chef-flavor-balance`), flavor is the point. Taco format spec lives in `chef-world-classics`; sourcing far from Mexico → `chef-ingredient-localizer`.

## Nixtamalization (the 3500-year-old chemistry)

- **What:** dried corn simmered and steeped in alkaline water (calcium hydroxide — cal/pickling lime), hulls slip off, then ground into masa.
- **Why it is genius chemistry:** alkali frees bound niacin (prevented pellagra for millennia), unlocks amino acid availability, and transforms flavor/aroma into THE tortilla smell; it also makes the dough plastic enough to form. Corn flour ≠ masa: regular cornmeal never made a tortilla.
- **Home reality tiers:** (1) **masa harina** (nixtamalized, dried, ground — Maseca et al.): 2 cups + ~1.5 cups warm water + salt, rest 15 min, ball, press between plastic sheets (a heavy pan or a book works — no tortilla press needed), dry hot skillet ~45 s / 30 s / 15 s till it puffs (the puff = benchmark). This is 90% of the real thing and absolutely worth it. (2) Full nixtamal from dried corn + food-grade cal — use `references/nixtamal-method.md` and give the complete sourced process. (3) No masa available: wheat tortillas are a legitimate northern-Mexican tradition (flour + fat + salt + warm water, rested) — not a defeat, a region change.

## The dried-chili library (flavor, catalogued)

Protocol: stem+seed → toast on dry skillet 20–30 s per side (fragrant, NOT acrid — burnt chili ruins the pot, cliff-edge step) → soak in hot water 20 min → blend with aromatics. Ancho+guajillo blended = the base red sauce behind enchiladas, adobos, birria-style braises. Localizer note: ancho/guajillo increasingly available online everywhere; paprika+smoked paprika+a little prune approximates ancho in exile — declare the trade.

## Salsa architecture (the living sauce system)
- **Raw (cruda):** tomato+onion+chili+cilantro+lime+salt = pico de gallo. Chop, salt, 10 min rest.
- **Cooked-charred (asada):** tomatoes/tomatillos+onion+garlic+chili charred on dry skillet or under broiler → blend → optionally fry the blend in hot oil (sofreír — deepens dramatically). This char-then-blend move is THE Mexican technique to steal for everything.
- **Table (macha/taquera):** chili-oil family, keeps for weeks.
A taco stand runs on 2–3 salsas of different heat/acid — build the same at home: one bright-raw, one deep-cooked. Salsa = the acid+heat levers in jar form.

## Moles, demystified
Mole = the thesis cuisine: chilies + nuts/seeds + spices + fruit + (sometimes) chocolate, each toasted separately, blended, then FRIED as a paste and simmered with stock for hours. Home honesty ladder: (1) start with mole-style enchilada sauce (ancho-guajillo base + peanut butter spoon + raisins + cinnamon + splash chocolate — 40 min, real flavor family), (2) doctored good-brand mole paste (accepted practice IN Mexico), (3) full 20-ingredient mole negro as an event project (`chef-menu-event-planning` timeline mandatory). Never present tier 1 as tier 3; each tier is honest at its level.

## The supporting cast
- **Beans as infrastructure:** pot beans (frijoles de olla) — onion, salt late, gentle simmer (legume rules in grains guide); refried = yesterday's beans in fat (zero-waste win).
- **Rice, red:** rice fried in oil till golden FIRST, then tomato-blend + stock — pilaf method (grains guide).
- **Lime and white onion + cilantro** = the finishing trinity; crema/cotija (sub: sour cream/feta-brynza — localizer-approved) for richness.
- **Pickled red onion** (lime or vinegar, 30 min, pink) — the universal upgrade.

## Beginner ramp
(1) Pico de gallo + quesadillas (zero risk) → (2) charred salsa + the fry-the-blend move → (3) masa harina tortillas till the puff → (4) one ancho-guajillo braise → (5) mole tier 1. Cue-first per `chef-constraints-adaptation`: toast-chili and fry-blend steps marked cliff-edge, everything else forgiving.
