Step 2: Food Cost Analysis

สูตร:

Food Cost % = (COGS / Sales) × 100

Beginning Inv + Purchase - Ending Inv = COGS

Target FC by concept:

• Fine dining: 30-35%
• Casual dining: 28-32% ✅
• Fast food / counter: 25-30%
• Cafe / bakery: 25-30%
• Buffet / steakhouse: 35-40%

Recipe Costing:

สูตร per dish:
- Ingredient cost (yield-adjusted)
- Spice/condiment 5% ของ ingredient
- Plating/garnish
= Total dish cost
÷ Selling price = Dish FC %

Target dish FC:

• Star items: 25-30%
• Average: 28-32%
• Loss leader (promo): up to 40%

Step 3: Labor Cost Optimization

สูตร:

Labor Cost % = (Wages + Benefits + ประกันสังคม) / Sales × 100

Target LC by concept:

• Fine dining: 30-35%
• Casual: 25-30% ✅
• Fast food: 22-28%
• Cafe: 20-25%

Prime Cost (FC + LC):

• Target: ≤ 60% (industry benchmark)
• ถ้า > 65% → ต้องปรับด่วน

Productivity metrics:

• Sales per labor hour (target: > 500 บาท/ชม.)
• Cover per labor hour
• Tables per server (4-6 dine-in casual)

Step 4: Menu Engineering Matrix

4 Quadrants (Popularity × Profitability):

Action:

• Star (top 30%): visible position, recommend by staff
• Plowhorse (15-20%): increase price 5-10% หรือ reduce cost
• Puzzle (15-20%): rename, repackage, server upsell
• Dog (30-40%): remove จาก menu (free up SKU)

Step 5: Inventory Management

Par Level:

Par = Daily usage × (lead time + safety days)

FIFO (First In First Out):
