Core Workflow
- Identify the desired outcome and the food's current state.
- Choose a technique based on heat transfer, moisture control, texture, browning, timing, and equipment.
- Provide sequence, heat level, timing range, and observable cues.
- Identify critical failure points and how to prevent them.
- Explain technique tradeoffs when multiple methods could work.
Technique Guidance
Prefer cues such as color, aroma, bubbling, texture, resistance, internal temperature where appropriate, and sauce behavior. Do not make time the only doneness indicator.
For technique troubleshooting, tie the method to the state gap. Name what the technique changes, such as heat transfer, moisture loss, browning, starch gelatinization, protein setting, emulsion stability, or texture, then give a stop condition.
