What "Alternative" Means

"Alternative winemaking" covers practices that diverge from the conventional post-WWII industrial winery model. That model is characterized by: cultured yeasts, controlled temperatures, enzymatic additions, acidification, chaptalization, commercial fining agents, sterile filtration, and sulfur dioxide at multiple stages.

Alternative winemaking represents either:

1. A return to pre-industrial techniques (qvevri, ancestral method, whole cluster, extended skin contact)
2. A philosophical rejection of intervention (natural wine, zero-SO₂, unfined/unfiltered)
3. A materials experiment (concrete eggs, amphora, large-format old oak, stainless steel)

None of these is inherently superior to conventional winemaking. They represent a different set of values: site expression over consistency, texture over clarity, risk over predictability, philosophy over profit margin.

Natural Wine

The Definition Problem

There is no legally binding definition of "natural wine" in any major wine jurisdiction as of 2025. France has introduced a "Vin Méthode Nature" label (2020), with requirements including: certified organic or biodynamic farming, hand harvest, no additions to the must except limited SO₂ at bottling (maximum 30 mg/L), and no filtration. This is the most official definition that exists, but it covers only French wines opting into the label.

The broader natural wine movement has no such codification — which is both a feature and a bug.

The broadly understood parameters:

• Certified organic or biodynamic viticulture (no synthetics in the vineyard)
• Hand harvest
• Wild/native yeast fermentation only (no commercial inoculation)
• No additions: no acidification, no chaptalization (sugar addition), no commercial enzymes, no concentrators, no commercial tannins, no Mega Purple (grape concentrate for color/body), no water addition
• Minimal to zero SO₂ — "zéro-zéro" (zero addition) is the movement's most extreme position; some accept small SO₂ at bottling
• No fining (no egg whites, bentonite, isinglass, casein)
• No filtration (or only coarse filtration)

What this produces, at its best: A wine that is a transparent expression of its site — unadulterated by commercial additions that standardize or correct the juice's natural character. These wines can show terroir with a clarity that conventional wines, whose flaws are corrected and whose characters are shaped by processing, do not achieve. At the extreme end: a natural wine from a specific old-vine plot on a specific vintage tastes like nothing else in the world.

What this produces, at its worst:

• Volatile acidity (VA): vinegar-like, sharp, driven by acetic acid bacteria in the absence of SO₂ protection. A genuine fault, not a style choice.
• Brettanomyces: farmyard, bandaid, leather in excess. Can result from uncontrolled wild fermentation in unhygienic conditions.
• Mousiness: a rare but catastrophic fault in natural wines. A persistent, lingering mousy aftertaste caused by tetrahydropyridines from lactic acid bacteria. Impossible to detect on the nose; only apparent after the wine is in the mouth. Not a style — a fault that renders the wine undrinkable to anyone who can perceive it (roughly 40–50% of people are sensitive).
• Refermentation in bottle: residual unfermented sugar + no sterile filtration + no SO₂ = possible secondary fermentation creating cloudiness, CO₂, and unpredictable wine behavior
• Simple oxidation: without SO₂ protection, wines exposed to oxygen can become flat and flat-tasting before they express what they're meant to.

The movement's honest contribution: The natural wine movement has forced the conventional wine industry to examine its additive practices more rigorously. The discovery that many commercial wines contained dozens of legally permitted additives was not public knowledge before the movement forced the conversation. The push toward transparency, lower intervention, and cleaner winemaking has been broadly positive even for conventional producers who would never call themselves "natural."

The critical assessment: The worst natural wine proponents engage in a category error: treating faults as style and non-traditional flavors as "interesting" rather than "flawed." A wine with significant volatile acidity is not more terroir-expressive because the winemaker chose not to add SO₂. It may simply be a flawed wine. Responsible natural winemaking requires cleanliness (SO₂ in the vineyard and early cellar, even if removed before bottling), technical skill, and the courage to reject wines that are genuinely faulty rather than merely different.

Orange / Amber Wine

What It Is

White wine made with extended skin contact — leaving the white (or grey, or pink) grape skins in contact with the juice for hours, days, weeks, or months. The resulting wine has:

• Amber to deep orange color (from skin pigments — anthocyanins in Pinot Gris and Gewürztraminer; tannins from all white skins)
• Tannin (from the skins — unique among white wines)
• Bitter, nutty, savory notes
• Oxidative character (the skin contact typically occurs in open vessels or with oxygen exposure)
• Lower aromatics than a conventionally made white (the volatiles dissipate during the long maceration)

The Ancient Origins

Skin-contact winemaking is not a 21st-century invention. It is probably the original method of winemaking — in the ancient world, there was no concept of "separating white juice from skins immediately." The orange wine revival is a return to how wine was made for thousands of years before the modern white winemaking paradigm of immediate pressing and cold, clean fermentation.

Georgia: The Georgian qvevri winemaking tradition involves fermenting and aging white wines on their skins in buried clay vessels (qvevri). This tradition, continuously practiced for 8,000+ years, is the historical origin of skin-contact winemaking. The UNESCO Intangible Cultural Heritage designation (2013) recognizes this tradition's global cultural significance. Rkatsiteli in qvevri with full skin contact = the original orange wine.

Friuli-Venezia Giulia (Italy): The modern revival's ground zero. Josko Gravner returned from a trip to Georgia in 2000 and subsequently converted his entire production to qvevri winemaking with extended skin contact. Stanko Radikon independently arrived at similar conclusions. Their wines — Gravner Ribolla Gialla, Radikon Jakot — became the reference wines of the modern orange wine movement. Both make wines that spend 6–7 months on skins in qvevri or large oak vessels.

Elsewhere now: Jura (Overnoy family tradition of little SO₂ and some skin contact), Slovenia (Movia, Renčel), natural wine producers globally.

Tasting Orange Wine

The profile:

• Appearance: Yellow-gold to deep amber, often cloudy
• Nose: Dried apricot, quince, tea, dried flowers, walnut, hay, sometimes funky/fermented notes
• Palate: Tannin (the distinguishing feature — a "tannic white wine"), bitter almond finish, savory, nutty, dry, complex
• Texture: Broader, more textured than conventional white wine — the tannin adds structure

Who it is for: Orange wine pairs better with food than with being drunk alone. The tannin and savory character work brilliantly with complex, rich dishes (aged cheeses, fermented foods, umami-rich Asian cuisine, charcuterie). It can be overwhelming without food.

Who struggles with it: Drinkers accustomed to the primary fruit and freshness of conventionally made white wine may find orange wine bitter, overly textured, or lacking the fruit they expect from a white wine. This is not a fault — it is a different wine category requiring recalibration of expectations.

Pét-Nat vs Traditional Method

Pétillant Naturel (Pét-Nat)

Technical recap: Bottled mid-fermentation. Single fermentation only. CO₂ trapped without riddling or disgorgement. Yeast sediment remains in bottle.

The experience:

• Lower carbonation than Champagne (2–3 bar vs 5.5–6 bar)
• Cloudy (yeast deposits) unless carefully decanted
• "Funky," "farmyard," "farmhouse" character from the extended yeast contact
• Lower alcohol (often 8–11% ABV)
• Slight sweetness possible if fermentation didn't fully complete
• Unpredictable bottle variation

What makes a good pét-nat: Balance between the natural fermentation character and the underlying fruit of the base wine. The best pét-nats (from Loire, Jura, California, South Africa, Georgia) have genuine aromatic complexity and refreshing effervescence that justifies the production philosophy. They are not trying to be Champagne — they are trying to be what they are.

The bubble question: Pét-nat's lower pressure creates smaller, softer bubbles than Champagne. Some drinkers prefer this; others find it insufficient. It is simply a different physical sensation, appropriate for a different set of food and occasion contexts.

Traditional Method (Méthode Champenoise)

The contrast:

• Two fermentations (controlled second fermentation in bottle)
• Long lees aging (autolysis)
• Disgorgement and dosage (controlled sweetness)
• Predictable, consistent pressure and clarity
• Complex autolytic character (brioche, toast, biscuit)
• Higher cost

Choosing between them: There is no correct answer. Traditional method produces a more controlled, complex, consistent product. Pét-nat produces a more spontaneous, variable, lower-intervention product. One is not superior — they are different tools for different intentions. Champagne with a tasting menu. Pét-nat at a picnic. Both deserve their context.

Vessel Alternatives

Clay / Amphora / Qvevri

The vessel itself: Terracotta (fired clay) has been used for wine storage and fermentation since the earliest evidence of viticulture. The material is porous — small amounts of oxygen pass through the clay walls, providing micro-oxygenation similar to a wooden barrel but without any oak flavor contribution.

Georgian Qvevri: Egg-shaped clay vessels, typically 500–5,000L, sealed with beeswax inside and buried in the earth. The burial provides:

• Constant temperature (the soil maintains roughly 12–14°C throughout the year)
• Stability (no racking needed; wine can simply rest)
• Micro-oxygenation through the clay walls

Fermentation and aging both occur in the qvevri. For amber wine production: white grapes ferment and age with full skin contact for 6 months or more. The qvevri is then sealed with a wax-covered lid and the wine is left to clarify and develop through the winter.

Italian and Spanish Amphora: Josko Gravner's adoption of qvevri inspired widespread experimentation with amphora winemaking outside Georgia. In Tuscany, the Emidio Pepe estate uses cement vats; in Spain, producers use tinajas (traditional large clay pots). The principles are similar to qvevri: neutral vessel, micro-oxygenation, no added wood flavors.

The flavor effect: Wines made in clay have a texture that advocates describe as "mineral," "earthy," and "integrated" — neither the fresh fruitiness of stainless steel nor the wood-influenced complexity of barrel. Detractors note the sometimes excessive oxidative notes or earthiness from the clay itself (particularly in poorly maintained vessels).

Modern ceramic: Some producers use purpose-built modern ceramic vessels (egg-shaped, similar to Georgian qvevri but manufactured commercially). Different from terracotta in their non-porous nature — but valued for the egg shape's convective mixing properties.

Concrete Vessels

The case for concrete: Concrete is neutral (no oak flavor contribution), thermally stable (thick walls moderate temperature without external systems), and can be cast into various shapes. Unlike stainless steel, concrete has micro-porous structure that allows very slow, steady micro-oxygenation — similar to the barrel's effect but without wood flavor.

The concrete egg (oeuf béton): Egg-shaped concrete fermenters, popularized by Nomblot in Burgundy and adopted internationally. The key claim: the egg's shape creates a natural convection current in fermenting or aging wine. As fermentation generates heat, warm liquid rises in the center and cooler liquid descends along the walls — a perpetual vortex. This claims to eliminate the need for pumping over or punching down (the lees are kept in constant suspension by the convection).

Who uses concrete:

• Cullen Wines (Australia): One of the early adopters for Sauvignon Blanc/Sémillon
• Haut-Brion (Bordeaux): Has experimented with concrete and stainless combinations for decades
• Many natural wine producers who want micro-oxygenation benefits without oak influence

The practical advantage: Relatively inexpensive to install, extremely durable, low maintenance, doesn't need replacing like barrels, no flavor contribution. The micro-oxygenation is more subtle than barrel but more than stainless steel.

Large Format Oak (Botti, Foudres)

Traditional Barolo — The Botti: Large (2,000–10,000L+) old Slavonian oak casks used for the "traditional" method of Barolo and Barbaresco aging. Key properties:

• Very low surface area to volume ratio → virtually no new oak flavor extraction
• Old (used for decades) → completely neutral wood
• The function: slow, steady micro-oxygenation through the stave walls and lids, helping to polymerize tannins over the long aging period (2–7 years in botti for traditional Barolo)

The traditional Barolo style is defined not just by the botti but by the long aging duration — the combination of extended lees contact, slow oxidative development, and absence of wood flavor creates the classic Barolo profile of tar, rose, and dried cherry.

Foudre (French): Large oak vessels (500–3,000L) used throughout Alsace, the Rhône, and increasingly the Loire and Jura. Older foudres are neutral. The micro-oxygenation benefit of wood without the flavor addition of small new barrique.

• Alsace uses foudres for Riesling and Pinot Gris aging — contributing to the fuller body of Alsatian whites vs German equivalents
• Châteauneuf-du-Pape: Many estates use large foudres rather than barrique for Grenache — matching the vessel to the wine's delicacy

The tradition vs modern debate: The "Barolo Wars" of the 1990s pitted traditional botti producers (Bartolo Mascarello, Giacomo Conterno, Bruno Giacosa) against "modernists" (some of them using small French barrique, rotary fermenters, and shorter maceration). The debate has largely softened — the market accepts both, and the finest examples of both exist. What remains is the philosophical position: botti = patience and tradition; small barrique = international style and earlier accessibility.

Carbonic and Semi-Carbonic Maceration

The Science

Carbonic maceration is an intracellular fermentation — fermentation occurs inside the intact, uncrushed grape cells rather than in the liquid must after crushing.

The process:

1. Uncrushed whole grape bunches are placed in a sealed vessel that has been flooded with CO₂ (eliminating oxygen).
2. The grapes begin enzymatic fermentation inside the intact berry, converting approximately 2% of sugar to alcohol.
3. After 1–3 weeks (duration varies), the grape cells eventually rupture. The grapes are then pressed and the juice undergoes conventional alcoholic fermentation to complete.

What this produces:

• Bright red cherry and raspberry fruit (not extracted from skins through conventional maceration)
• Banana and bubblegum aromatics: isoamyl acetate, produced during the intracellular fermentation (ethyl cinnamate also contributes a cherry-candy note)
• Very low tannin (minimal skin-juice contact during the intracellular phase)
• Deep color despite low tannin (anthocyanins are extracted during the brief intracellular phase)
• Low acid (malic acid is partially consumed during intracellular fermentation)

Who uses it and why: Beaujolais Nouveau: The archetypal commercial application. Gamay grape (Beaujolais), 100% carbonic maceration, released 6 weeks after harvest (third Thursday of November). The result: a wine specifically designed to be maximally fruity, accessible, and unchallenging immediately after fermentation. High volume, low complexity, reliable — appropriate for its purpose.

Semi-Carbonic Maceration (Beaujolais Cru Method)

In practice, most Beaujolais cru production uses semi-carbonic maceration rather than fully controlled carbonic maceration. The difference:

• Whole clusters are placed in the tank without external CO₂ injection
• The bottom layer of grapes is crushed by the weight of grapes above, beginning conventional fermentation
• The CO₂ produced by this conventional fermentation rises and fills the headspace, creating the CO₂-rich environment needed for intracellular fermentation in the upper grape layers
• Result: both conventional fermentation (bottom) and intracellular fermentation (top) occur simultaneously

The result is more complex than pure carbonic maceration — the conventionally-fermented fraction adds structure and depth; the intracellular fraction adds fruit and freshness. This is why Beaujolais crus (Morgon, Fleurie, Moulin-à-Vent, Brouilly, etc.) are more serious and age-worthy than Beaujolais Nouveau while maintaining the characteristic freshness.

The aging surprise: Morgon and Moulin-à-Vent, when made from old Gamay vines and aged carefully, can develop Pinot Noir-like complexity over 5–10 years. The banana and bubblegum notes of youth fade; earth, cherry, and minerality emerge. This aging capacity is entirely unexpected from Beaujolais but documented.

Global adoption: The technique is now used for fresh, light reds beyond Beaujolais:

• Light Grenache and Cinsault in the Rhône and Languedoc for early-drinking versions
• Natural wine producers globally who want the technique's light-touch extraction
• Some Oregon and California light-red experiments

Whole Cluster Fermentation

The technique expanded: Including stems in fermentation is more nuanced than simply "whole cluster vs destemmed." The percentage of whole cluster (0–100%), the ripeness of the stems at harvest, and the fermentation management all determine the outcome.

What stems contribute:

• Stem tannin: Different from skin tannin — more granular, finer-textured when fully ripe; green and harsh when unripe. This tannin adds to the wine's structural skeleton without necessarily increasing the coarseness associated with excessive skin tannin extraction.
• Spice and pepper: Stems contain pepper compounds (rotundone, the compound also responsible for white pepper in cool-climate Syrah). In Pinot Noir, rotundone from stems adds a warming spice note.
• Forest floor and woodland: Ripe stems add an earthy complexity — decaying leaves, forest floor — that is characteristic of Burgundy wines from producers who use high whole-cluster percentages.
• Temperature regulation: The woody stem material absorbs heat during fermentation, moderating the ferment temperature naturally. High whole-cluster percentages can reduce peak fermentation temperature by 2–3°C without mechanical cooling.
• CO₂ extraction (intracellular fermentation in whole berries): If uncrushed whole clusters are used, the intact berries undergo some intracellular fermentation, similar to carbonic maceration — adding fresh fruit and low-tannin fractions.

The ripeness requirement: Stems must be fully "physiologically ripe" — brown and woody, not green. Green stems from a cool year add harsh, astringent, herbal tannins that can unbalance the wine. This is why whole-cluster fermentation is a warm-vintage technique at most estates. In 2012 Burgundy, many producers who normally use 30% whole cluster reduced to 0% because the stems were green.

The Burgundy divide:

• High whole cluster (50–100%): DRC (often 100% in certain vineyards), Armand Rousseau, Dujac (traditionally high, now variable), Jean-Marie Roumier. The resulting wines have greater structural complexity, aging potential, and the characteristic "Burgundian spice."
• Low or zero whole cluster: Many other Burgundy estates, most New World producers until recently. Cleaner, more direct fruit.
• Emerging practice: Oregon, Sonoma, New Zealand producers have increasingly adopted whole cluster as they've refined the technique over two decades.

Biodynamic Winemaking

The Winemaking Calendar

Biodynamic winemaking extends the farming calendar's principles into the cellar. The Maria Thun Biodynamic Calendar (first published 1963, now annually) provides day-by-day guidance on astronomical conditions, dividing time into four types:

The tasting-day claim: Many biodynamic and some non-biodynamic winemakers, sommeliers, and critics report observing that wines genuinely taste differently on fruit days vs root days. The proposed mechanism involves lunar gravitational effects on plant and liquid systems.

The scientific status:

• A 2012 study (Vino Vino wine tasting society, Bristol): Found no statistically significant difference in wine quality assessments across calendar day types in double-blind conditions.
• A 2010 paper in the Journal of Wine Research found some evidence of wine quality variation correlating with moon cycles, but methodological concerns limited conclusions.
• The effect, if real, would need to overcome: atmospheric pressure variation (known to affect tasting), temperature variation (significant tasting variable), sensory habituation (the same taster rates differently at different times regardless of moon), and expectancy bias.
• Current scientific consensus: No reliable, replicated, controlled evidence for the biodynamic calendar's effect on wine tasting.

The pragmatic position: Many serious professionals do not schedule important tastings on root days — not because they are certain the effect is real, but because the cost of being wrong (if the effect is real) outweighs the cost of the precaution (rescheduling a tasting). This is a rational risk-management decision even under uncertainty.

Biodynamic Cellar Practices

Lunar influences in vinification:

• Racking and bottling timed to certain moon phases (some producers rack only on fruit or flower days)
• Biodynamic preparations may be added to wine during certain calendar periods
• Battonage (lees stirring) timed to calendar

The certification boundary: Demeter certification covers farming practices. Winemaking is harder to certify biodynamically because the standards for "biodynamic wine" vs "wine from biodynamic grapes" are contested. Demeter does certify wines (with permitted and prohibited additives lists), but many biodynamic farmers bottle conventionally-made wine from biodynamically farmed grapes and still list the Demeter certification.

Who practices biodynamic winemaking (not just farming): The distinction between biodynamic farming and biodynamic winemaking is important. Most certified Demeter estates make their wine conventionally (yeast, SO₂, fining) from biodynamically farmed grapes. Very few estates apply biodynamic principles to both farming and winemaking. Nicolas Joly (Coulée de Serrant) is the most vocal proponent of fully biodynamic winemaking. DRC practices biodynamic farming; their winemaking is Burgundian conventional.

A Summary Framework: Intervention Spectrum

The most useful way to understand alternative winemaking is to place it on a spectrum:

No tier is objectively superior. Each represents a set of priorities and tradeoffs. The greatest wines in the world exist at every level of this spectrum.
