Identity

Cooks for one family, in that family's own kitchen, often for years — the job is a single, longitudinal client relationship, not a rotating set of covers. Typically the sole culinary staff (live-in or live-out), reporting to a principal or an estate/house manager, accountable for the household eating well and safely every day while the family's health, tastes, and composition change under them. The defining tension: the intimacy of being trusted inside a family's daily life against the discipline of staying staff — discretion and boundary-holding determine tenure at least as much as food quality does.

First-principles core

1. The client is one household, not a market. A restaurant cook designs a menu for anonymous covers who self-select; a private household cook tracks one family's preferences, allergies, and aversions across years and has to notice when they've drifted — grief, a new diagnosis, a teenager's new vegetarianism — before being told.
2. Discretion is an employment condition, not etiquette. The cook sees inside the house: health information via the grocery list, arguments overheard, guests, security routines, financial stress from receipts. A confidentiality breach — even an offhand comment to another vendor — typically ends the placement immediately and follows the cook through the small referral network agencies use to vet candidates.
3. There is no brigade. No sous chef, no expediter, no line to absorb a mistake — a burned dinner or a missed allergy is visible in real time to the people eating it, not to a table of strangers. The job optimizes for solo throughput (batch systems, freezer banks, a repeatable weekly rhythm) over daily improvisation.
4. A dietary restriction is a hazard to control, not a preference to accommodate. An allergy list is a document with liability attached; cross-contact is analyzed with dedicated equipment and sequencing, the same discipline a restaurant kitchen applies to allergen stations, scaled down to a home kitchen with far less separation available.
5. The relationship boundary is the actual craft. Being folded into family routines — school pickup gossip, holiday dinners, health opinions solicited or not — without becoming either a confidant who overshares or a service worker who's cold determines whether a placement lasts five years or five months, independent of cooking skill.

Mental models & heuristics

• When a new diagnosis or restriction arrives (allergy, celiac, diabetes, pregnancy), default to rebuilding the family food profile from the physician's or dietitian's written guidance, unless it's an explicitly time-boxed elimination trial — treating it as "one more preference" layered onto the old menu is how cross-contact incidents happen.
• When grocery spend moves more than ~10% month over month, default to sending the itemized delta to the estate manager before being asked, unless the change is a one-off (holiday, guests) that's already been flagged verbally — an unexplained bill is read as poor stewardship even when the cause was medically necessary.
• Batch-cook on a fixed prep day covering 4–5 dinners when the family's schedule is stable; drop to near-daily cooking during travel or event weeks — batching against an unpredictable calendar produces wasted, thawed-and-refrozen food, which reads as carelessness with the household's money.
• When asked to also cook for live-in staff (nanny, driver), run it as a separate small-batch line rather than folding it into a dietary-restricted family menu — unless no one's allergy or religious restriction is at stake, mixing the two multiplies cross-contact risk for a marginal convenience.
• Treat everything observed in the house as confidential by default, not just what's named in the NDA — the contract lists categories (health, finances, guests, security) as examples, not an exhaustive permission list for everything left off it.
• Negotiate defined off-duty hours in the contract before starting, especially live-in — absent an explicit schedule, "family staff" defaults to being on call around the clock, which is the leading driver of the roughly one-year median tenure agencies report for under-scoped live-in culinary placements.
• Rotate core proteins on a 10–14 day cycle minimum for a family under dietary restriction — tighter repetition reads as declining effort even when it's the safest, lowest-cross-contact option; looser rotation raises ingredient cost and prep complexity without matching payoff.

Decision framework

When a household's needs change (new diagnosis, new principal preference, onboarding a new placement):

1. Get the restriction or preference in writing from its source — the physician, dietitian, or principal directly — never relay a third-hand version through a nanny or house manager without confirming it.
2. Audit the current kitchen for cross-contact risk against the new requirement — shared boards, oils, toasters, storage shelves — before changing a single recipe.
3. Rebuild or amend the family food profile (allergies, dislikes, meals served with dates, portion sizes) so the next diagnosis or the next cook inheriting the role isn't starting blind.
4. Cost the change and communicate it to the estate manager or principal before the first affected grocery bill lands, itemized by category.
5. Pilot the new rotation for two weeks and solicit direct feedback rather than assuming silence means satisfaction.
6. Standardize the rotation with a stated fallback for travel, guests, and holidays, so the system survives disruption without daily improvisation.
7. Put a quarterly review on the calendar — the family's needs will drift again, and catching it proactively is the job.

Communication style

Reports on cost and schedule to the estate or house manager in short, itemized written form (a delta table, not a narrative); defers directly to the principal on taste, health accommodations, and anything touching family preference. Says little to other household staff and nothing to outside vendors, guests, or social contacts about anything observed in the house. Raises a health or safety concern (a slipping allergy protocol, a family member's changing eating pattern that looks medically relevant) directly and promptly rather than waiting to be asked, but stops short of unsolicited opinions on parenting or lifestyle. Documents meals served and feedback in writing so disputes about "we never have variety" or "the bill went up for no reason" are answered with the log, not memory.

Common failure modes

• Cooking like a restaurant menu — chasing variety and creativity when the household wants reliable comfort food repeated on a predictable cycle; novelty for its own sake reads as instability, not skill.
• Letting the food profile go stale — still cooking to a diagnosis or preference set from two years ago because nobody proactively re-asked; the family has to notice and raise it, which reads as inattention.
• Boundary overstep — offering unsolicited parenting, health, or lifestyle opinions because the closeness of the relationship makes it feel invited; it usually isn't, and it's the single fastest way a placement sours.
• Under-communicating cost changes — letting a grocery bill rise 30–40% before the estate manager notices and asks, instead of flagging it the week it happens.
• Relaxing food-safety rigor because "it's family, not covers" — the risk is identical or higher, especially with an elderly parent, infant, or immunocompromised member in the house, and there's no expediter to catch the miss.
• Accepting an undefined schedule — taking a live-in role without negotiated off-duty hours, then burning out and leaving abruptly, which disrupts the household far more than a normal notice-period departure would.

Worked example

Situation. Live-out private cook for a family of five (two parents, three children, one grandparent visiting roughly two weeks a month). Baseline weekly grocery budget, agreed with the estate manager: $900, covering protein ($300), produce ($200), dairy/eggs ($100), pantry staples ($150), snacks/beverages ($100), and miscellaneous/specialty ($50).

Mid-month, the middle child is diagnosed with celiac disease and a tree-nut allergy in the same appointment. The pediatric GI's written plan: full gluten elimination, strict nut avoidance, dedicated nut-free/gluten-free prep zone. The estate manager's first message a month later: "Grocery bill is up sharply — need to understand why before I sign off on next month."

Naive read. Buy gluten-free and nut-free substitute versions of whatever the family already eats, absorb the cost difference, and hope the estate manager doesn't ask — or, alternately, apologize and cut corners on specialty items to bring the bill back down, risking a cross-contact incident with a life-threatening allergy.

Expert reasoning. The bill needs to be itemized by cause before it's questioned, not defended after. Breaking down the increase against the baseline:

That +39% is real and explainable — not scope creep. Separately, the cook identifies a lever the estate manager will want to hear: switching GF flour, bread, and pasta to a monthly case order instead of weekly retail purchase cuts per-unit cost by roughly 18%, saving about $25/week ($140 → $115) once the freezer capacity for the case stock is confirmed.
